Tonight I had the most delicious pineapple ice cream. What, you say? Delicious and healthy ice cream? Yup! It had no added sugar, took about a minute to make, and only had TWO ingredients!
Ingredients:
1 cup frozen pineapple
1/4 cup milk
The pineapple can start out fresh or canned, but you have to freeze it before making the ice cream. I bought a can of pineapple chunks in 100% pineapple juice (don’t get the “packed in heavy syrup” kind), and I divided it up into three baggies (each with about 1/3 of the pineapple and juice from the can). I stuck the bags in my freezer and made the ice cream the next day.
The milk can be any kind you desire: coconut milk or almond milk, or just regular old 1% milk, which is what I used.
Recipe:
1. Put the frozen pineapple into a blender and pour in the milk.
2. Blend until it is the texture of ice cream.
3. Pour into a cup.
4. Enjoy this delicious (and healthy) treat!
