My husband and I are trying to be better about our eating habits lately, paying much closer attention to our calorie intake and macros. It’s always a thrill when we come up with a new meal idea that fits our needs AND is super tasty!
This week we cooked up some chicken in our crockpot, seasoned it with enspice’s chipotle bbq, and served it shredded on lettuce wraps with a little shredded cheese and some grilled veggies. The result? A simple, tasty, and healthy meal!
As a gastric sleeve patient, it’s important for me to eat plenty of protein, so low cal / high protein is a winning combo. Chicken that is breaded or drenched in sauce can certainly be tasty, but with the right seasoning, you can avoid those things and still make your tastebuds happy.

Slow Cooker Chipotle BBQ Chicken recipe
Whenever we make a chicken slow cooker meal, we usually cook up 4-5 pounds of chicken and use the leftovers the next day to make quesadillas. It’s a great way to make two meals at once!
So while the recipe below only calls for 2 pounds of chicken, feel free to make more and just increase all the other ingredients proportionately.
You can pick and choose your own veggies to include or make things super simple and buy a package of pre-cut fajita veggies. This busy mom goes the easy route.

Slow Cooker Chipotle BBQ Chicken Lettuce Wraps
Equipment
- Slow cooker
- Medium frying pan
Ingredients
- 2 lbs chicken breasts
- 3/4 cup water or chicken broth
- 1/2 cup shredded cheese
- 4 tbsp enspice chipotle bbq seasoning
- 1 cup chopped fajita veggies
- 1 head lettuce
Instructions
- Add chicken to bottom of slow cooker
- Pour water or broth over chicken and add 3 tbsp of seasoning on top
- Cook on low for 6–8 hours or high for 3–4 hours
- Shred chicken with two forks and return to slow cooker to mix in the broth
- Saute or warm fajita veggies in frying pan with the rest of the seasoning
- Serve chicken on lettuce with veggies and shredded cheese on top
