Slow Cooker Chipotle BBQ Chicken Lettuce Wraps

Enjoy an easy, healthy meal with slow cooked chicken seasoned with chipotle bbq and served on lettuce wraps.

  • Slow cooker
  • Medium frying pan


  • 2 lbs chicken breasts
  • 3/4 cup water or chicken broth
  • 1/2 cup shredded cheese
  • 4 tbsp enspice chipotle bbq seasoning
  • 1 cup chopped fajita veggies
  • 1 head lettuce


  • Add chicken to bottom of slow cooker
  • Pour water or broth over chicken and add 3 tbsp of seasoning on top
  • Cook on low for 6–8 hours or high for 3–4 hours
  • Shred chicken with two forks and return to slow cooker to mix in the broth
  • Saute or warm fajita veggies in frying pan with the rest of the seasoning
  • Serve chicken on lettuce with veggies and shredded cheese on top
