Slow Cooker Chipotle BBQ Chicken Lettuce Wraps

Enjoy an easy, healthy meal with slow cooked chicken seasoned with chipotle bbq and served on lettuce wraps.
Slow cooker
Medium frying pan
- 2 lbs chicken breasts
- 3/4 cup water or chicken broth
- 1/2 cup shredded cheese
- 4 tbsp enspice chipotle bbq seasoning
- 1 cup chopped fajita veggies
- 1 head lettuce
Add chicken to bottom of slow cooker
Pour water or broth over chicken and add 3 tbsp of seasoning on top
Cook on low for 6–8 hours or high for 3–4 hours
Shred chicken with two forks and return to slow cooker to mix in the broth
Saute or warm fajita veggies in frying pan with the rest of the seasoning
Serve chicken on lettuce with veggies and shredded cheese on top
