Try this Southwestern Spinach Artichoke Dip for a spicy take on the original. Pair it with a frozen Red Baron pizza and some Coca-Cola™, and sit back and enjoy some family time!

Are you the kind of mom who spends her holiday in the kitchen cooking and baking up a storm, or are you the kind of mom who finds herself constantly in the drive-thru, throwing food at the kids, and eating in the car on the way from one event to another?

With four kids and a choir teacher husband, the holiday season is filled with performances, parties, concerts, and lots more. We love being part of all the excitement, but sometimes it feels like we never get to enjoy a meal together as a family!

Luckily it doesn’t take a gourmet guru to have a nice, relaxing, delicious meal with the family. This busy mom loves to take advantage of preprepared and frozen meals that I can quickly put on the table, which everyone will enjoy.

This weekend was busy as usual, with a dress rehearsal, two play performances, and two choir concerts.

But we managed to sit down together late one afternoon, to enjoy some Red Baron pizza and Coca-Cola™.

I even made a yummy side to go with it, a southwestern spinach artichoke dip.

I’m all about those dips, and this one takes the usually mild spinach artichoke dip and kicks it up a spicy notch! And you can make it in the slow cooker, which makes it super easy to put together!

Southwestern Spinach Artichoke Dip

Ingredients:
1 can (14oz) artichoke hearts
1 box (10oz) frozen spinach- thawed and chopped
1 can (4oz) diced green chiles
1 can (4oz) diced jalapenos
8oz cream cheese
1/2 cup shredded pepper jack

For dipping:
Breadsticks and/or tortilla chips

Directions:

1. Mix all ingredients, except the shredded cheese, into the slow cooker.
2. Cook on low for 2-3 hours.
3. Stir in the shredded cheese and cook for another 5 minutes.
4. Serve with breadsticks and/or tortilla chips
