Raspberry Jello Pretzel Cups {Mini Pretzel Recipe}

Raspberry Jello Pretzel Cups {mini pretzel recipe}

I had so much fun making (and eating) the Bavarian mini pretzel recipe I shared last week, that I wanted to showcase another fun take on how to make a delicious pretzel treat! I had lots of mini pretzels on hand from last week, so I thought I’d do another mini pretzel recipe!

These Raspberry Jello Pretzel Cups are a real winner for any gathering, holiday, party or event! This is the most delicious dessert for 3 reasons. Texture, Taste and Technique.

Texture: First of all, you will die when you get to combine 3 of the most unique food textures in your mouth at the same time, the crunchy crumble of the pretzel baked and soaked with melted butter, the creamy thickness of the cheesecake filling, and the cool tang of the raspberry jello floating on top with chunks of real raspberry to satisfy.

Taste: The explosion of distinctive tastes between subtle cream cheese, sweet tangy raspberry, and the savory salty pretzel will leave your taste buds doing a double take.

Technique: This will make you feel like a true champ in the kitchen. While it’s not too hard of a dessert to conquer, combining the elements into a splendid looking centerpiece at a party dessert table will thrill any crowd.

So gather your supplies and apron.  And bring your game because it’s on.

Raspberry Jello Pretzel Cups {jello salad mini pretzel recipe}

Ingredients:

(yields 9 servings)
4 cups mini pretzels
1 tub whipped cream (thawed)
1 package cream cheese (softened)
1 package raspberry Jell-O
1 cup sugar
¾ cup butter (melted)
3 tbsp sugar
Raspberries (frozen or fresh)

Tools:

-Food processor (useful, but not essential… just find a way to crumble those pretzels super fine)
-Electric Mixer (useful, but not essential… your hand holding a spatula would also work if you have a stronger arm than me)
-Oven set to 400 degrees
-Pot for preparing Jell-O
-Chinet cups or wine glasses or cute parfait cups for serving

Steps:

First, get all of your stations ready before you get started. You’ll have to be tending to three different stations at once near the end, so be prepared!  Are you good at multitasking? Here’s a great test to see!

1. Bottom layer – mini pretzels

Mash your mini pretzels into tiny bits, using a food processor or your own brute strength. Mix the pieces with ¾ cup melted butter and the 3 tablespoons of sugar. Spread the mixture in a baking dish and bake in the oven at 400 degrees for 8-10 minutes.

2. Middle layer – cream cheese filling

While the pretzel layer is baking, it’s time to make the cream cheese filling!

Make sure you’re working with softened cream cheese and thawed whipped cream. You need to cream the sugar with the cream cheese FIRST before you add the whipped cream.  Make sure you cream these two items together nicely or your filling will be crunchy from the sugar.

Once it is creamed, add the whipped cream by folding it into the bowl until all is blended smoothly.

3. Top layer – raspberry jello

To make the jello, just follow the instructions on the box. I use the speed set option because why would anyone prefer the 4 hour method for setting jello and who has 4 hours anyway?

4. Putting it all together

Jello Salad Mini Pretzel Recipe Assembly

By now your pretzels should be ready and out of the oven and moved over to the assembly station.  Once the gelatin is prepared but still warm, grab your three amazing elements, your cups, your frozen berries and some spoons and get ready to assemble!

Add the frozen berries to the gelatin while it is still cooling, right before assembly. Add as many as your little heart desires.

Assemble three layers:

1. Spoon some of the pretzel mixture into the cup and press down with your knuckles.

2. Then scoop some cream cheese filling on top of the pretzels and tap the cup onto the counter to settle.

3. Use a small measuring spoon and add around 2 scoops of the warm gelatin on top.

4. Carefully place these cups in pie tins to store neatly in the fridge.

5. Serve it up

Once the gelatin has set (about an hour if you did the speed set method), serve it in your cutest method possible and enjoy with your most favorite people and it is like a little scoop of heaven in an individual cup!
