Grab ‘n Go Freezer Egg McMuffin Sandwiches

Hi! I’m so glad you are here, because today I’m sharing one of my favorite easy breakfast recipes! Who here loves a “grab ‘n go breakfast?” Who here loves an Egg McMuffin?? Well good, cause today we are making Freezer Egg McMuffin Sandwiches!

Imagine how good you'll feel when you know you can have a delicious, nutritious breakfast ready for everyone in your family, in just about a minute per person! You'll feel even better when you taste these yummy make-ahead egg mcmuffins! #breakfast #freezercooking

I’m going to share with you exactly how to make a ton of these yummy guys all at once, how to store them, and I’ll show you how ridiculously easy it is to reheat them when it’s time to eat!

Look, I’m a busy mom, just as I bet you are. And who has time to dedicate to breakfast on those crazy, gotta-get-out-the-door mornings?! Not me. These sandwiches are perfect for the husband on the go grabbing a quick bite on his way to work, or those kiddos rushing out the door on their way to school.

Imagine how good you’ll feel when you know you can have a delicious, nutritious breakfast ready for everyone in your family, in just about a minute per person! Ahhh, that alone would make me jump out of bed in the morning! No. More. Hectic. Mornings!

So throw on an apron after you hit the grocery store and get ready to prep 30 amazing Egg McMuffin breakfast sandwiches. That’s what’s for breakfast!

Egg McMuffin breakfast sandwiches

Mmm, I’m so hungry!

Alright, time to hit the grocery store! I love these McMuffins, because you can build them however you want! Prefer bacon over ham? Go for it! Not a cheese lover? Leave it off! Can’t get enough cheese? Add two slices (I won’t tell)!

Freezer Egg McMuffins Ingredient list:

Freezer Egg McMuffin: Ingredients
  • 30 English Muffins: I have the absolute thrill of living 1.5 miles away from a discount bread store. You gotta find one of these and get a spare freezer to fill. I get THE best bread for $1 a loaf.)
  • 30 fake cheese slices: Again, you can opt for healthy cheese blocks of any flavor and slice it yourself or even deli cheese if you prefer.
  • 30 eggs

FUN TIP: Did you know that you can freeze eggs? You can! Crack the egg into ice cube trays, mix the yolk and white together and once frozen, pop them into Ziplocs for easy storage! Voila!

  • 30 slices of ham OR bacon OR Canadian bacon OR sausage patties: I just bought a mega pack of cheap honey ham in the lunch meat department and a package of bacon, just to mix it up.
  • Pam spray
  • Muffin pan OR griddle
  • Plastic Wrap
  • Freezer Storage Bags

Now grab some of your little ones- they’ll love helping out with the assembly process!

Time to assemble these bad boys!

You’ve got all of your ingredients, and now you’re ready to put these mcmuffins together! First you’ll need to cook the eggs, but then it’s just a matter of stacking everything!

Assembly:
Preheat your oven to 275 degrees F.

First you want to make your eggs. It is absolutely crucial that you SPRAY the heck out of the muffin pan or you might as well throw the pan away now. Those eggs will be oh so stuck to that pan unless you Pam it like crazy! So first things first… spray, spray, spray! Then… get crackin’!

Cook eggs in a muffin tin- they'll fit perfectly on these Make Ahead McMuffins!

After cracking the eggs in your muffin tin, take a fork and break the yoke. This will help evenly cook the eggs. This is also a great time to salt and pepper the eggs to your liking.

Drop your muffin pans into your pre-heated oven for about 10 minutes. Ovens are all very different, so a good rule of thumb is how they look- the whites should be white and not translucent but the yellows should be shloppy (<- real word) and still undercooked. (See picture below) This is good!! Remember, you are not eating these now! When these are ready to get devoured they will go back into a super hot microwave and cook again, finishing off the yolk to perfection!

Add pepper and salt to the eggs for your Freezer Egg McMuffins

Next, assembly line prep! While the eggs are cooking, I like to prep my sandwiches so that my very last step is throwing my egg right in between my ham and cheese… YUM. Look at that picture and see the pre-melt on that fake cheese. Ooh… I’m starting to hear my stomach growl right about… now!

Add bacon, ham, or sausage to your freezer Egg McMuffins

Plastic wrapping anything is probably the most annoying part of freezer meals, but just delegate this job to one of your children or your husband, basically anyone who will be eating this, and then you don’t have to worry about the maddening part.

(Psst, in order to make these look so very pretty for wrapping, turn the sandwich upside down for wrapping and then when you’re finished, the sandwich will be right side up! Kind of like wrapping Christmas presents!)

Quick and easy breakfast for those hurried mornings! These freezer Egg McMuffins reheat in just 1 minute.

Wrap these suckers super tight and plop them in a Ziplock bag and throw ‘em in the freezer. These will last you a while if you plastic-wrapped them well. Because they are individually wrapped, each person can grab ‘n go to their little heart’s desire.

Put your Make Ahead McMuffins in freezer bags, and don't forget to label!

There you have it, one of my favorite easy breakfast recipes! A little prep work = a month of quick and easy breakfasts!

Reheating
When they are ready to eat, unwrap and heat in the microwave from their frozen state for 1 minute. My hubs says they “come back to life really well.” He eats them on his 30 minute commute to work every morning and it gives him a delicious and necessary jump start to his day.

Below is where I went off the beaten path a little bit and you can too:

I fried up some bacon for a batch of 12 because who can resist an entire package of bacon??

Answer: No one.

Add some bacon to your McMuffins- it freezes and reheats well

Just substitute your bacon for the ham, and now you have two great breakfast choices!

Bacon and cheese on your freezer Egg McMuffins will taste great in the morning!

Enjoy making your egg sandwiches and be proud knowing that you just made a month’s worth of breakfast! That’s definitely something to be proud of!

Easy, grab-and-go breakfast for busy families! Make a batch and freeze for a whole month’s worth of on-the-go breakfasts!

Ingredients
  

  • 30 English muffins
  • 30 cheese slices
  • 30 eggs
  • 30 slices of ham bacon, Canadian bacon, or sausage patties
  • Pam spray
  • Muffin pan or griddle
  • Plastic Wrap
  • Freezer Storage Bags

Instructions
 

  • Preheat your oven to 275 degrees F
  • Spray muffin pan with Pam
  • Crack eggs into muffin pan, making sure yolks are broken, and add salt and pepper
  • Bake for 10 minutes (eggs will still be a bit undercooked)
  • Prep sandwiches while eggs bake by separating the English muffins and adding cheese to one half and meat to the other
  • Add eggs and close up sandwiches
  • Wrap sandwiches in plastic wrap, put in a Ziploc bag, and place in freezer
  • To reheate- unwrap and heat in microwave for 1 minute

Hi! It’s Layla here! Great question! Although I didn’t do either for mine in the post, I have buttered them in the past because when you microwave them it melts to an oh-so-delicious buttery goodness! I don’t see a need to lightly toast them in the beginning, however, if you have extra time in the grab-n-go process, one method I would suggest would be to microwave them first and then either toast them in a toaster oven or even put them in a fryer pan just to get the muffins a bit more crunchy. The microwave is the re-heater process, but the fry pan definitely brings back the perfect firmness to the bread. (PS… this is the process I use to reheat leftover pizza… delish!)
